Pecan Gorgonzola Mango Salad

Ingredients:

  • 1 head Boston lettuce, rinsed an d torn into bite-size pieces (Endive will do if you can’t find Boston lettuce).
  • 1 pear peeled, cored, and diced
  • 1/4 cup sundried tomatoes, diced
  • 1 mango peeled, seeded, and diced
  • 1/2 cup gorgonzola cheese
  • 1 tablespoon olive oil
  • 3 tablespoons balsamic vinegar
  • 1 cup Trinity Valley Roast and Salt Pecan Halves
    salt and pepper to taste

In large salad bowl, toss together all ingredients. Serve. You may want to double the recipe cause it’s a real winner at dinner.
